This post is not about when your baby can eat corn, it is about baby corn which is sometimes called young corn, or cornlettes. Baby corn is a cereal grain taken from corn but is harvested very early while the stalks are rather small and still immature. So babsically baby corn is immature cobs of sweet corn, picked off the stalk as the ear begins to develop.
(BTW- If your brain wheels are now turning, according to BabyCenter.com you can introduce corn to most babies as early as six months. Just FYI.)
Baby corn is typically eaten whole, cob included, unlike mature corn, where the cob is too tough for human consumption. You can eat baby corn both raw and cooked. Baby corn is most common in Asian cuisine while in my Thai cookbooks, it is referred to as candle corn.
Because it is very labor intensive, baby corn can be expensive. Once I had the idea to grow baby corn at my house until I realized I had to let the corn stalk grow completely before the corns would begin to grow. For the rest of you City Slickers that means six foot tall or higher. Only then can you see the tiny ears develop and you can think about picking them.
So scrap that idea. I will leave the corn growing up to the trained professionals. To get my baby corn smiles I will be happy to buy it at the grocery store or my favorite Asian restaurant.
